Many hunters would like to process their own deer but think it takes too much time work and effort. It does take a commitment to the process but it is the best way to get the most out of the meat you are going to be eating in the next year. Next time try this simple recipe. Mix 2 lbs. deer burger with 1/2 lb of sage breakfast sausage and 1 tablespoon of a good seasoning such as &lt;a href='http://www.deercook.com/cart_product.cfm/prod_id/13048/bk/1/tid/22'/&gt;&lt;/strong&gt;&lt;/span&gt;&lt;/span&gt;&lt;span style='background-color:white'&gt;&lt;strong&gt;Char-Steak&lt;span style='color:black'&gt;. Let the meat sit for about 1/2 hr. to moisten the seasonings. Make 1/3 lb patties about 3/4 " thick then fry or grill to medium rare. Put on a really good bun with purple onion, lettuce, tomato and cheese. Add your favorite condiments and enjoy. The burgers will be juicy, tender and flavorful. You may substitute the sausage with a half lb. of smoked bacon for another good flavor treat. &lt;br /&gt;&lt;/span&gt;&lt;/strong&gt;&lt;/span&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;br /&gt; &lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Arial; font-size:7pt; background-color:white'&gt;&lt;strong&gt;Ground venison usually lives in obscurity in the freezer till all the other cuts of meat are gone.  Then it is used for chili or deer burgers or it is left in the freezer and not used at all. There is tons of deer burger left in the freezer all over America that never gets used. It is finally thrown out after a couple of years just sitting in the freezer. There are ways to use your burger so that it becomes a mainstay of your venison meals and gets used as a more regular menu item.&lt;br /&gt;&lt;/strong&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='color:black; font-family:Arial; font-size:7pt; background-color:white'&gt;&lt;strong&gt;You can check your deer burger for quality by looking at it and seeing if there is more white then red. More white then red means there is a lot of tallow (deer fat) and not as much lean meat. This type burger won't taste as good because tallow does not taste good. It is what causes people to say it is gamey and is the part that leaves that filmy taste in your mouth when you eat bad burgers. Look for more red then white in your burger meat to insure the quality of the meat is good.&lt;br /&gt;&lt;/strong&gt;&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style='font-family:Arial; font-size:7pt'&gt;&lt;span style='color:black; background-color:white'&gt;&lt;strong&gt;When you cook the deer burger with the pork, the pork fat grabs the deer tallow so when you drain the skillet the bad taste of the tallow goes out with the pork fat and the meat will be more flavorful. Some people think the tallow is like beef fat and should be used to cook the deer meat with tallow in it. Beef fat taste good to most people deer tallow does not taste good to most people. Eliminate the tallow from you deer meat and it will taste better to most people. Anything white in deer meat should be removed from the meat. Try to drain as much deer tallow off the meat as possible. Treat the meat a little better when cooking and your meals will begin to have more flavor and you will begin to use more ground venison. Use a long thin roast about 2" thick. The muscle of the back leg works good for this it is longer and thinner then the other &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_2"&gt;muscles&lt;/span&gt;. Make your marinade to taste. Here are some ideas to help you create your own marinade . I'll give you some measurements but they can be varied according to your personal likes. Use some &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_3"&gt;Worcestershire&lt;/span&gt; sauce (1/2 cup), 1/2 can of beer,or coke,or juice,or wine any will do. Add some liquid smoke (2&lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_4"&gt;tbsp&lt;/span&gt;) and 1/2 package of onion soup mix. Blend all together and pour over deer roast that has been rubbed with &lt;a href="http://www.deercook.com/"&gt;&lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_5"&gt;Deer Cook&lt;/span&gt; Char- Steak &lt;/a&gt;or another &lt;a href="http://www.deercook.com/home.cfm/sid/173"&gt;good blend&lt;/a&gt;. If you don't have a blend use salt,pepper,onion salt and garlic salt blended together. Rub on the roast and put in a glass dish in the fridge- the &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_6"&gt;longer&lt;/span&gt; the &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_7"&gt;better&lt;/span&gt; overnight if possible. Put in the oven on 330 &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_8"&gt;degrees&lt;/span&gt; for 35 minutes. Check for internal temp of 135 degree for rare 145 for medium. Try not to overcook. You can do it on a low heat grill if you wrap it in a couple layers of tinfoil and put some of the marinade in the foil for moisture &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_9"&gt;purposes&lt;/span&gt;. Check internal &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_10"&gt;temperature every&lt;/span&gt; 1/2 hour or 15 min intervals. The meat will not be as tender as beef or as juicy as pork but it will be good and trying this 2 or three times you will be doing deer brisket marinades just the way you like them. They have thin hair and are thinner because of their enviormental changes that occur right now. Be sure to keep water available for them. Put out some salt to help with their nutritional needs. Its always nice to have a couple deer around on a regular basis. Of course when this fall comes things will change for you and them. For some people ,they won't hunt near the house 'cause those deer are like their pets. True, but your neighbors might not like that they ate all their flowers and shrubs when the drought was on. Thats the wonder of deer - for some they should be protected but for others they can be a pest. I do know that if you prepare them right they taste mighty good. Now is a good time to start &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;practicing&lt;/span&gt; with your bow so by the fall you will be ready for that all &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_2"&gt;important&lt;/span&gt; shot. &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_3"&gt;If&lt;/span&gt; you are a gun &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_4"&gt;hunter&lt;/span&gt; ,get your &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_5"&gt;rifles&lt;/span&gt; out and check them over, try and shoot them a couple times to be sure they hit where &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_6"&gt;they're&lt;/span&gt; supposed to. This year consider taking some does off the public lands and off your farms so that the deer population will remain &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_7"&gt;healthy&lt;/span&gt; and strong. There are &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_8"&gt;definitely&lt;/span&gt; enough does &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_9"&gt;that&lt;/span&gt; a few used for your meat source will be good for you and the heard. Take some venison out of the &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_10"&gt;freezer&lt;/span&gt; and cook up last years meat so you will be ready for fresh meat.
